Quick & Easy No Bake Oatmeal Cookies

Have you ever had a taste for something sweet, but had no chocolate in the house or candy to be found! This recipe utilizes commonly stocked items already in the house and offers simple substitutes for missing ingredients. It's quick, simple and will satisfy your sweet tooth. Follow the directions below, but do note that I tend to cook without measures so the measurements below are estimates. These can be adjusted more or less to your liking.

  • 4-5 packets of Instant Oatmeal Maple Brown Sugar (or 1-2 cups)

  • 3 tbs of butter

  • 1/3 cup of milk or substitute with 2-3 tbs of your favorite coffee creamer. I used Coffee mate snicker creamer!

  • ¼ cup of water (or enough to submerge oatmeal)

  • ⅓ cup of cocoa or substitute with carnation breakfast essentials

  • 3-4 tablespoons of peanut butter


Step 1: Bring milk (or coffee creamer), cocoa (or carnation breakfast essentials) along with butter and water to a boil. Boil for about 1 ½ minutes.

Step 2: Slowly stir in instant oats. Then slowly stir in peanut butter. Mix together until blended. Allow oats to cook.

Step 3: Scoop out spoonfuls onto a gently greased pan or wax paper. Place in refrigerator to cool.
